This Lemon Ice Box Pie, lovingly known as Pap’s Pie, is one of those recipes.
It was shared with me by the Sparks family, who graciously entrusted me with not only the recipe itself, but the beautiful story that has been passed down alongside it. I believe the best recipes are never just about ingredients—they’re about the people who stirred the batter, set the table, and made a house feel like home.
For the Sparks family, this pie was a Christmas tradition. Darrell’s Pap made it just once each year, and over time it became something everyone looked forward to. After his passing, the recipe became more than dessert. It became a way to remember him, honor his love, and keep a piece of him present at every holiday gathering.
That’s what I love most about family recipes. Long after the voices become memories and the chairs around the table begin to change, a familiar recipe has a way of bringing people back. One bite can transport us to a kitchen filled with laughter, a holiday spent with loved ones, or a moment we thought we’d almost forgotten.
At Pretty & Painful, that’s exactly why I wanted to include recipes like this. Grief and joy often meet around a table. We celebrate birthdays, holidays, reunions, and even comfort one another through loss with food lovingly prepared from generations before us. Every handwritten recipe card, every stained cookbook page, and every family tradition tells a story worth preserving.

Ingredients
- * 1 (8-inch or 10-inch) graham cracker crust * Juice of 3 fresh lemons (about ¾ to 1 cup) * 2 (14-ounce) cans sweetened condensed milk * Whipped topping (optional

1. Juice the lemons until you have approximately ¾ to 1 cup of fresh lemon juice. 2. In a large mixing bowl

combine the sweetened condensed milk and fresh lemon juice. 3. Beat with an electric mixer for about 2 minutes

until smooth and creamy. 4. Pour the filling into the graham cracker crust. 5. Refrigerate overnight
